This post is completely strays from my typical post but I'm going to go for it anyway. I usually leave the food writing to my foodie sister, Elizabeth (off my plate). I hope she'll forgive me for diving into her territory. We'll see if she approves! Maybe she'll repost to her blog! I'll keep my fingers crossed!
I came home from a non-stop day today! I feel like I drove all day! Bringing to school, parent-teacher conferences, errands, picking up from school, gymnastics. When I got home the last thing I wanted to do was cook dinner. I just went to the store yesterday but everything seemed too complicated! I didn't want to turn on the stove! So I decided a salad was it! But what kind...it needed something interesting going on. I found a can of Albacore tuna and here's what I came up with! It really was quite good and I'll be adding it to my summer staples! Try it out sometime! I'd love to hear what you think.
Amazing Tuna Avocado Salad for 2
Ingredients for Tuna Salad:
- 1 (5 ounce) can white albacore tuna, drained and flaked
- 4 tablespoons mayonnaise
- 1-2 tablespoons Parmesan cheese (I used fresh shredded)
- 4-5 Sweet Gherkins pickles, chopped small
- 2 green onions, chopped, use both green and white parts
- 1/2 teaspoon onion powder
- 1 teaspoon dried dill weed
- 1 teaspoon garlic powder
Ingredients for salad:
- 1-2 cups of Lettuce
- 5-6 Cherry Tomatoes
- 2 whole Haas Avocados
- 1 tablespoon of Extra Virgin Olive Oil
- 1 teaspoon of Lemon Juice
- Salt and Pepper to taste
Drain and flake 1 can of white albacore tuna in a mixing bowl. Chop your sweet pickles and green onions. Add to the tuna. Then add in your mayonnaise, Parmesan cheese and herbs.
To serve:
Plate a bed of lettuce — I use a mixture of different lettuces. I tear my lettuce. Then I added an assortment of different color cherry tomatoes. Slice each avocado in half and remove pit, then scoop the entire half of avocado out of the skin. Place it in the center of the bed of lettuce. Fill it with half of the tuna salad. Cover it with the other half of the avocado. Drizzle salad with extra virgin olive oil and lemon juice. Salt and pepper to taste.

That sounds amazing! We love tuna salad and parm cheese, but I've never thought of putting them together. :)
